Mixed Seeds Energy Bars
Perfect for the school lunch box, on-the-go food, satisfy-the-munchies food.
These are almost a complete food, containing vitamins, minerals, omega EFAs.
Preparation time: 15-20 mins
Serves: Makes about 20 bars, depending on size
Ingredients:
1/4 cup of organic sunflower seeds
1/4 cup of organic chia seeds
1/4 cup of organic sesame seeds
1/4 cup of organic pumpkin seeds
1/2 cup of desiccated coconut
1/2 a cup of raw almond butter
2 tbsp of coconut oil
2 tbsp of coconut nectar or few drops of stevia
2 tbsp of cacao powder
Chocolate topping (optional but who wouldn’t?)
100g cacao butter
2 tbsp cacao powder
2 tbsp lucuma, mesquite or raw protein powder
3 tbsp cup shelled hemp seeds
1 tbsp vanilla extract or vanilla powder
sweetener to taste – see notes below
pinch sea salt
Method:
Process the ingredients in a food processor but not too fine so you still get a crunch
Press the mixture into a container – metal baking tin or glass
Pop into the fridge while you are making the raw chocolate topping
Melt the cacao butter in a dehydrator or bain marie. Combine all the ingredients in a blender until smooth. Adjust sweetness to taste
Pour chocolate on top of seed mixture and let it set in the fridge for at least one hour, before removing and cutting into snack sized bars

Which sweetener you use and how much is a personal thing. Here are some suggestions, add, taste and adjust:
Zero Glycemic index – stevia liquid (high quality, no after taste stevia from Pheel Good Alkaline Health or Lo Han powder
Low Glycemic index – Yacon Syrup, palmyra jaggery, coconut nectar
High Glycemic index – organic honey or agave nectar
