Millionaire’s Shortbread

This will grace any afternoon tea table. Also a great energy food to take on a walk.

Raw version of 'caramel shortbread' usually made with white sugar and flour and condensed milk. This is far superior in every way!

Preparation time: 10 mins

Serves: Makes about 8-10 bars, depending on size and thickness

Ingredients:

Base:

  • 1cup walnuts, soaked, drained, rinsed (other nuts can be used)

  • 1 tbsp coconut butter

  • 1-2 tbsp vanilla extract

  • 8 drops of stevia

  • 1/4-1/2 tsp cinnamon

    Butterscotch middle:

  • 1/3 cup coconut oil

  • 1/2 cup lucuma or mesquite

    Chocolate topping:

  • 1/2 cup (100g) raw cacao butter

  • 1/3 cup maca

  • 1/3 cup raw cacao powder or carob

  • 4 drops of stevia, or more to taste

Method:

  • Process the base ingredients in the food processor. Line a small tin. Put in freezer or fridge to set

  • Mix coconut oil and lucuma in a glass in a jug of hot water. Spread over base and return to fridge

  • Mix cacao butter, maca, cacao and stevia in a glass in a jug of hot water. Spread over middle layer and return to fridge

  • Store in an airtight container
