Raw Cheese

Delicious on a salad, with raw crackers or sauerkraut.

Macadamia nuts boost metabolism, fight oxidative stress, relieve inflammation and aid in weight loss. The addition of probiotics adds extra goodness.

Preparation time: 5 mins

Serves: 3-5

Ingredients:

  • 2 cups macadamias, soaked overnight

  • 1 cup water

  • 1 tsp probiotics (open up a capsule)

  • lemon juice

  • garlic to taste

  • salt to taste

Method:

  • Blend all the ingredients in a high speed blender

  • Place in a nut milk bag (or piece of muslin) in a sieve over a bowl. Place a weight on top and leave at room temperature to culture for 36-48 hours

  • After 36 hours add ½ tsp salt, 1 tsp lemon juice and freshly crushed garlic to taste

  • Keep in the fridge in a sealed container for up to 2 weeks

  • Serve with some home made crackers
