Raw Granola
Great way to start your day after your have drunk your morning water (to hydrate the body) and a green juice or smoothie.
Good to eat at any time of the day. Add powdered superfoods blended with water instead of nut or seed milk (maca, raw protein powder, medicinal mushrooms, macuna, ashwaganda, and so on).
Preparation time: 15 mins
Serves: 8-10 servings
Ingredients:
1 cup almonds and 1 cup sunflower seeds in one bowl
1 cup sesame seeds in a separate bowl
1 cup pumpkin seeds in another bowl
1 or 2 organic apples (if you are off fruit, a few drops of stevia would sweeten)
flesh and zest of 1-2 organic oranges (optional)
2 tsp vanilla extract or powder (or more to taste)
2 tsp cinnamon
pinch salt
1/4 cup coconut oil
Method:
Soak the almonds, sesame and pumpkin seeds overnight, drain and rise
Blend the apples, oranges, vanilla, cinnamon, salt and oil in a food processor
Chop the almonds, sesame and sunflower seeds in the food processor Add them to the bowl and mix with the apple mixture. Add in the pumpkin seeds whole
Spread on teflex sheets and dehydrate at 105 deg Fahrenheit or 40.56 deg Celsius for 6-8 hours or overnight. Remove onto the mesh sheets or just turn the mixture over and dehydrate until completely dry
If you don’t have a dehydrator you can use an oven on the lowest setting with the door open
Serve with seed or nut milk
To make your own milk:
Soak a cup of the nuts or seeds (brazils, almonds, sesame, hemp) overnight, drain and rinse
Blend with 3 cups of water. Drain the milk through a fine sieve or nut milk bag
Hemp milk can be made with whole seeds as above or a quick method is to blend 1 or 2 tbsp of hulled hemp seeds with a cup of water (depends how ‘creamy’ you like your milk)
A few drops of stevia and a teaspoon of vanilla will sweeten the milk
Serve with seed or nut milk
Top with whatever goodies fit into your regime:
raw cacao nibs
coconut chips
fresh bee pollen
hulled hemp seeds
maca
dried berries - goji, sour cherries, incan berries (all low glycemic)
fresh berries - blueberries, strawberries, raspberries
hulled hemp seeds
You can substitute the almonds for hazelnuts, walnuts, brazils or a mixture for a change.
Store in an air tight container. Will keep for a few weeks
