Mixed ‘Roasted’ Vegetables
This dish will keep for a few days but tastes so good it may not last that long.
This dish has surprisingly intense flavours and has a ‘cooked' texture to the vegetables.
Preparation time: 10 mins, plus 3-4 dehydrating
Serves: 4-6
Ingredients:
1 courgette sliced on a mandolin
250g cherry tomatoes halved
2 medium red onions sliced on a mandolin
1 red pepper cut into strips
crushed garlic to taste
juice of 1/2 a lemon
2 tbsp olive oil
salt to taste
Method:
Put all the vegetables in a bowl. Add the lemon and oil and mix well
Marinate for 30-60 mins if you have the time
Dehydrate for 3-4 hours. This will intensify the flavours and give a 'cooked' texture to the vegetables
