Kale Crisps
The kids will love these, but be warned: they can disappear very quickly!
Kale contains fibre, antioxidants, calcium, vitamins C and K, iron, and a wide range of other nutrients that can help prevent various health problems.
Preparation time: 10 mins, plus about 24-36 hours dehydration time
Serves: 6-8
Ingredients:
200g kale, stems removed and torn roughly into largish bite sized pieces
100g soaked cashews
1 large red pepper
juice of a large lemon
small onion or two cloves of garlic
1 fresh red chilli, deseeded
salt to taste
Method:
Blend the red pepper, chilli, lemon and salt. Add the cashews and blend again until creamy
Massage the mixture into the kale
Dehydrate at 115 deg Fahrenheit or 46.11 deg Celsius for 24-48 hours. Turn over onto the mesh sheets and dehydrate until crispy
Store in an airtight container
