Kale & Avocado Salad
Massaging the kale with salt and lemon makes it more digestible.
Eating healthy fats like those in avocados helps slow stomach emptying, which keeps you full longer than usual and delays the return of hunger.
Preparation time: 5 mins
Serves: 4 as a main course salad, 6-8 as a first course
Ingredients:
200g kale, stem removed and finely chopped
1 tomato, chopped
1 avocado diced
1 stalk celery
2 tbsp flax or olive oil
2 tsp lemon juice
1tsp salt
Method:
Add the salt to the chopped kale in a bowl and massage well until the kale wilts. Add lemon and massage again
Blend the avocado, oil and celery to a cream and mix with the kale
Add the tomato and serve
