Christmas Pudding with Orange Custard

All the indulgence of Christmas, but so much better for you.

Better than the 'real' thing with a delicious orange custard. Dried fruit is high in fructose. For anyone with a sugar sensitivity - diabetes, candida, etc – serve the orange cream with fresh organic berries, pomegranate seeds or soaked goji berries.

Preparation time: 10 mins

Serves: 6-8

Ingredients:

  • 1 cup almonds

  • 1/2 cup soft dates

  • 1/2 cup raisins

  • 1 fig

  • zest of an organic orange and an organic lemon

  • 1/4 tsp cinnamon

  • 1/4 tsp allspice / mixed spice

  • pinch salt

  • 1 organic apple

    Orange Custard:

  • 1 1/2 cups cashews soaked for at least 2 hours

  • juice of a freshly squeezed orange

  • zest of the orange if it is organic

  • 1 tsp vanilla

Method:

  • Combine all the pudding ingredients in a food processor

    Press a couple of tablespoons into a round metal pastry cutter. Press down and gently remove the pastry cutter. You will get 6-8 puddings, depending on the size. You can make them any shape you wish

  • The puddings are just delicious as is or dehydrate at 105 deg Fahrenheit or 40.56 deg Celsius for 6-8 hours to make them firmer

  • Serve with the orange custard. To make, drain and rinse the nuts. Blend all the ingredients in a blender until smooth

  • Check for sweetness. Add more orange juice or some water for a more pouring consistency
