Avocado & Spinach Dip

For a spicy Indian flavour, add 1/4 tsp curry powder, 1/8 tsp freshly grated ginger, pinch each of chili powder, cayenne and cumin and serve with red onion bread.

Avocados contain a wide range of nutrients and may have various health benefits. These include improving digestion and lowering the risk of depression.

Preparation time: 10 mins

Serves: 4-6

Ingredients:

  • 2 cups spinach

  • 1 avocado

  • 1 tbsp lemon juice

  • 1 clove garlic

  • Himalayan salt to taste

Method:

  • Combine ingredients in a blender, blend until smooth

  • Serve with butternut squash or sweet potato crisps
