Avocado & Spinach Dip
For a spicy Indian flavour, add 1/4 tsp curry powder, 1/8 tsp freshly grated ginger, pinch each of chili powder, cayenne and cumin and serve with red onion bread.

2 cups spinach
1 avocado
1 tbsp lemon juice
1 clove garlic
Himalayan salt to taste
Method:
Combine ingredients in a blender, blend until smooth
Serve with butternut squash or sweet potato crisps
