Chia Pudding with Cardamom & Pistachio
Chia seeds are loaded with antioxidants, vitamins, minerals, fibre, animo acids, protein and omega-3 fatty acids.
Chia helps with weight lose, improves athletic endurance, increases energy and improves the look of hair, skin and nails.

Ingredients:
1/4 cup chia seeds
1/2 cup pistachios roughly chopped or crushed in a pestle and mortar
1 cup hemp milk made from 1 cup filtered or spring water and 2 tbsp hulled hemp seeds blended, or almond milk
1 tsp ground cardamom
pinch of Himalayan or sea salt
Topping:
Coconut nectar or yacon syrup
2 tbsp pistachios roughly chopped or crushed in a pestle and mortar
Method:
Put the chia seeds in a bowl. Mix with the hemp milk, pinch of salt and cardamom. Stir and leave for 15 minutes
Add the chopped pistachios
Divide mixture into two serving bowls, decorate with chopped pistachios and drizzle with coconut nectar or yacon syrup
