Chia Pudding with Cardamom and Pistachio

Chia seeds are loaded with antioxidants, vitamins, minerals, fibre, animo acids, protein and omega-3 fatty acids.

Chia helps with weight lose, improves athletic endurance, increases energy and improves the look of hair, skin and nails.

Serves: 2

Ingredients:

  • 1/4 cup chia seeds

  • 1/2 cup pistachios roughly chopped or crushed in a pestle and mortar

  • 1 cup hemp milk made from 1 cup filtered or spring water and 2 tbsp hulled hemp seeds blended, or almond milk

  • 1 tsp ground cardamom

  • pinch of Himalayan or sea salt

    Topping:

  • Coconut nectar or yacon syrup

  • 2 tbsp pistachios roughly chopped or crushed in a pestle and mortar

Method:

  • Put the chia seeds in a bowl. Mix with the hemp milk, pinch of salt and cardamom. Stir and leave for 15 minutes

  • Add the chopped pistachios

  • Divide mixture into two serving bowls, decorate with chopped pistachios and drizzle with coconut nectar or yacon syrup
