Potassium Broth

Good to have on hand when detoxing, also when recovering from illness.

This clear broth is full of minerals which nourish the body without taxing the digestion.

Preparation time: 10 mins plus 1-2 hrs simmering

Serves: 8-10 servings

Ingredients:

  • 4 large organic potatoes (ONLY use the skin)

  • 4 large organic carrots (with skin)

  • 2 sticks organic celery

  • 1 organic leek, sliced

  • 3 whole organic beetroot, sliced plus greens (if available)

  • 2 peeled and sliced organic onions

  • 10 cloves of garlic

    Optional extras:

  • Seaweed - any kind

  • grated ginger

  • grated turmeric root

  • saffron

Method:

  • Put all the ingredients in a covered pot using clean filtered water and bring to the boil. Simmer for 1-2 hours

  • Strain out the vegetables, cool and drink the broth

  • Refrigerate leftover broth in glass containers for use over the next couple of days

  • Serve as is or add some tamari, miso, sea or Himalayan salt, cayenne pepper
