Mushroom Pate

The walnuts make this a very satisfying dish.

For extra colour, sprinkle with finely chopped red pepper.

Preparation time: 5 mins

Serves: 4-6

Ingredients:

  • 1 1/2 cups cleaned and chopped organic mushrooms

  • 1/2 cup walnuts, soaked overnight

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tbsp tamari

  • 1 tbsp freshly chopped parsley

  • 1 tsp fresh thyme

  • 1 tsp fresh oregano

  • 1 or 2 tbsp water, or more if needed

  • 1/2 tsp salt

Method:

  • Chop the ingredients in a food processor until mixed but still chunky

  • Serve in lettuce, radicchio or chicory leaves
