Mushroom Pate
The walnuts make this a very satisfying dish.
For extra colour, sprinkle with finely chopped red pepper.
Preparation time: 5 mins
Serves: 4-6
Ingredients:
1 1/2 cups cleaned and chopped organic mushrooms
1/2 cup walnuts, soaked overnight
1 tbsp olive oil
1 tbsp lemon juice
1 tbsp tamari
1 tbsp freshly chopped parsley
1 tsp fresh thyme
1 tsp fresh oregano
1 or 2 tbsp water, or more if needed
1/2 tsp salt
Method:
Chop the ingredients in a food processor until mixed but still chunky
Serve in lettuce, radicchio or chicory leaves
