Raw Hummous

Great to have in the fridge for lunch or serve as a first course at a dinner party.

Sprouted chick peas are full of enzymes and protein. Serve in organic little gem lettuce leaves or endive. Sprinkle with finely chopped red pepper, parsley and/or grated carrot. Can also be served with raw vegetable sticks.

Preparation time: 5 mins

Serves: 4-8

Ingredients:

  • 1 cup sprouted chick peas (1/4 cup dried chick peas soaked overnight and sprouted for 2-3 days)

  • 1 clove garlic

  • 3 tbsp olive oil

  • 2 tbsp tahini

  • 1-2 tbsp lemon juice

  • Himalayan or sea salt to taste

Method:

  • Blend the ingredients in a high speed blender or food processor until smooth

  • Serve with raw vegetable sticks or on lettuce or radicchio 'boats'
