Chocolate Chia Pudding

Chia seeds are a superfood powerhouse - full of protein and easy to digest. This is a A quick dessert that can be russelled up in no time.
Delicious for breakfast!
Preparation time: 5 mins
Serves: 2-4
Ingredients:
1 cup cashews, soaked for a few hours then drained
2 tbsp vanilla extract
pinch salt
1/2 cup cacao powder
1/3 cup chia seeds soaked in 2 cups of water (the seeds will soak up the water in 15 mins)
sweetener of your choice – stevia, Lo Han, yacon syrup, honey – to your taste
Method:
Blend the ingredients in a high speed blender and sweetened to taste
Pour into wine glasses or ramekins. Leave in the fridge to firm up
Decorate with mint leaves, berries, borage flowers, pecan nuts or coconut chips
