Sweet Potato Soup
The sweetness of the vegetables is subtly balanced by the orange, lemon, cayenne and nutmeg.
Sweet potatoes contain vital minerals and vitamins including beta-carotene and vitamin A (for good eyesight).
Preparation time: 10 mins
Serves: 3-4
Ingredients:
1 sweet potato (approx. 400g)
3 carrots (approx. 400g)
2-3 scallions or 1 shallot
1 tbsp fresh minced rosemary
1/4 cup cashews or brazil nuts
juice of 1 orange
juice of 1/2 lemon
1/8 tsp freshly ground nutmeg
salt to taste
Method:
Blend the ingredients until smooth
Garnish with fresh chives or parsley and a sprinkle of cayenne
