Sunflower Seed Pate

Popular at parties and good to have in the fridge for snacks and lunches.

Sunflower seeds are high in vitamin E. Also a good source of vitamins B1, B3 and B6, copper, manganese, phosphorous and manganese.

Preparation time: 3 mins

Serves: 4

Ingredients:

  • 1 1/2 cups sunflower seeds soaked overnight, drained and rinsed

  • 1/2 cup lemon juice

  • 1/4 cup chopped scallion or shallot

  • 1/4 cup tahini

  • 6 tbsp roughly chopped parsley

  • 2 cloves of garlic

  • pinch of cayenne pepper or more to taste

  • 1 tbsp grated fresh ginger

  • 1/2 tsp ground cumin

Method:

  • Blend the ingredients in a food processor until smooth
