Sunflower Seed Pate
Popular at parties and good to have in the fridge for snacks and lunches.
Sunflower seeds are high in vitamin E. Also a good source of vitamins B1, B3 and B6, copper, manganese, phosphorous and manganese.

Ingredients:
1 1/2 cups sunflower seeds soaked overnight, drained and rinsed
1/2 cup lemon juice
1/4 cup chopped scallion or shallot
1/4 cup tahini
6 tbsp roughly chopped parsley
2 cloves of garlic
pinch of cayenne pepper or more to taste
1 tbsp grated fresh ginger
1/2 tsp ground cumin

Blend the ingredients in a food processor until smooth
