Orange Buckwheat Granola
This granola can also be made with organic apples or pears instead of oranges.
Buckwheat is gluten-free, a good source of fibre and rich in minerals and various plant compounds, especially rutin. As a result, buckwheat consumption is linked to several health benefits, including improved blood sugar control and heart health.
Preparation time: 10 mins, plus dehydrating time
Serves: 8-10 servings
Ingredients:
3 cups of buckwheat sprouted **
3 organic oranges
4 tbsp coconut oil
pinch sea or rock salt
vanilla extract or powder to taste (1 tbsp approx.)
Method:
Grate the zest from the oranges. Slice the peel from the oranges but include some pith aa it is full of goodness
Put the zest and the flesh of the oranges in the food processor with the coconut oil and pinch of salt and vanilla extract
Process this mixture until smooth and add to the sprouted buckwheat in a bowl and mix thoroughly
Dehydrate for 10-12 hours at 105 or 110 deg Fahrenheit / 40.56 or 43.33 deg Celsius or until crisp
** Soak the buckwheat in filtered water for 20-30 mins (no longer or it will go glucky). Drain, rinse and place in a colander. Rinse once a day, or twice if the weather is very warm. In a day or two it will grow small tails. When the tails are the same size and the buckwheat grains it is ready.
