Kohlrabi, Cabbage and Sour Cherry Salad

An unusual, fresh tasting salad.

Kohlrabi is full of vitamin C which boosts your immune system and makes your skin glow.

Preparation time: 10 mins, plus 10 mins marinating time

Serves: 6

Ingredients:

  • 1 medium kohlrabi (approx. 400g)

  • 400g white cabbage

  • 4 tbsp fresh dill, roughly chopped

  • 1 cup dried whole sour cherries

  • grated zest of an organic lemon

  • 1/3 cup lemon juice

  • 1/4 cup olive oil

  • 1 clove garlic crushed

Method:

  • Peel the kohlrabi and cut into thick matchsticks. Shred the cabbage on a mandolin

  • Place all the ingredients in a bowl and massage

  • Let the salad marinade for 10 minutes before serving
