Kohlrabi, Cabbage & Sour Cherry Salad
An unusual, fresh tasting salad.
Kohlrabi is full of vitamin C which boosts your immune system and makes your skin glow.
Preparation time: 10 mins, plus 10 mins marinating time
Serves: 6
Ingredients:
1 medium kohlrabi (approx. 400g)
400g white cabbage
4 tbsp fresh dill, roughly chopped
1 cup dried whole sour cherries
grated zest of an organic lemon
1/3 cup lemon juice
1/4 cup olive oil
1 clove garlic crushed
Method:
Peel the kohlrabi and cut into thick matchsticks. Shred the cabbage on a mandolin
Place all the ingredients in a bowl and massage
Let the salad marinade for 10 minutes before serving
