Broccoli & Red Pepper Salad

Marinated broccoli softens and tastes really delicious - you'll never want to steam it again.

Combined with the Almond Butter & lime this is a great salad.

Preparation time: 5 mins

Serves: 2-4

Ingredients:

  • 2 cups broccoli, cut into 1cm florets

  • 3 tbsp tamari

  • 2 tbsp cold pressed sesame oil or olive oil

  • 2 tsp lime juice

  • 2 large handfuls baby spinach

  • 1⁄4 cup almond butter

  • 1 tbsp finely chopped fresh red chilli (optional)

  • 1⁄2 cup chopped red pepper

  • 1⁄4 cup sliced spring onion

Method:

  • Marinate the broccoli, tamari, oil and lime juice in a bowl for 1–2 hours

  • Massage the almond butter into the spinach. Add to the broccoli and remaining ingredients
