Broccoli & Red Pepper Salad
Marinated broccoli softens and tastes really delicious - you'll never want to steam it again.
Combined with the Almond Butter & lime this is a great salad.
Preparation time: 5 mins
Serves: 2-4
Ingredients:
2 cups broccoli, cut into 1cm florets
3 tbsp tamari
2 tbsp cold pressed sesame oil or olive oil
2 tsp lime juice
2 large handfuls baby spinach
1⁄4 cup almond butter
1 tbsp finely chopped fresh red chilli (optional)
1⁄2 cup chopped red pepper
1⁄4 cup sliced spring onion
Method:
Marinate the broccoli, tamari, oil and lime juice in a bowl for 1–2 hours
Massage the almond butter into the spinach. Add to the broccoli and remaining ingredients
