Beetroot, Carrot & Celeriac Salad with Fresh Mint & Chilli

Very satisfying dish with a fresh light taste.

Perfect as a first course at a dinner or lunch party.

Preparation time: 10 mins

Serves: 4 good sized portions, 6 small

Ingredients:

  • 1 cup beetroot, julienne on a mandolin or grated

  • 1 cup carrot, julienne on a mandolin or grated

  • 1 cup celeriac, julienne on a mandolin or grated

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp freshly chopped red chilli

  • 2 tbsp finely chopped fresh mint

  • Himalayan or sea salt to taste

Method:

  • Combine the ingredients in a bowl.
