Beetroot, Carrot & Celeriac Salad with Fresh Mint & Chilli
Very satisfying dish with a fresh light taste.
Perfect as a first course at a dinner or lunch party.
Preparation time: 10 mins
Serves: 4 good sized portions, 6 small
Ingredients:
1 cup beetroot, julienne on a mandolin or grated
1 cup carrot, julienne on a mandolin or grated
1 cup celeriac, julienne on a mandolin or grated
2 tbsp olive oil
1 tbsp lemon juice
1 tsp freshly chopped red chilli
2 tbsp finely chopped fresh mint
Himalayan or sea salt to taste
Method:
Combine the ingredients in a bowl.
