Rhubarb & Carrot Salad
Simple and quick, but exotic.
Rhubarb, used as a medicine by the Chinese, contains calcium, potassium, magnesium, iron, manganese, selenium, copper and phosphorus.

Serves: 4
Ingredients:
1cup finely chopped rhubarb
1 3/4 cup finely chopped carrot
1/2 an onion or a shallot, finely chopped
2 handfuls freshly chopped parsley
sea or rock salt to taste
Dressing:
1 small avocado or 1/2 a large one
2 tbsp lemon juice
1 tbsp olive oil
1/2 cup cashew nuts soaked
Method:
Blend the dressing ingredients until smooth
Put the salad ingredients in a salad bowl and mix with the dressing
