Mineral Rich Salad
Seaweed is full of minerals essential for good health.
Edible seaweed is also a source of sodium, magnesium, phosphorus, iodine, potassium, iron and zinc. These minerals are known to help prevent chronic diseases, including cancer, cardiovascular disease and obesity.
Preparation time: 10-15 mins, plus 30 mins marinating time
Serves: 6-8
Ingredients:
1/2 cup dried dulse
1/2 cup dried nori
1/2 cup dried wakame
1 organic cucumber
3 medium carrots
1cup shredded red cabbage
1/4 cup chopped shallot or scallion
1/2 cup chopped fresh parsley
Dressing:
2 tbsp umeboshi vinegar
2 tbsp tamari
4 tbsp apple cider vinegar
4 tbsp sesame, flax or olive oil
Method:
Snip the seaweeds into small pieces with scissors. Soak in a bowl of warm water until soft. Drain and pat dry with kitchen roll
Peel, deseed and dice the cucumber. Peel and dice the carrots, cut into thin matchsticks. Add the onion and cabbage
Combine the seaweed, vegetables in a bowl and marinate in the dressing for 30 minutes before serving
